Tuna Salad (fully loaded)

   I quite like tuna. What I like more is having tuna that is just all cozied up with other tastes and textures. So, that's what happened (and happens often) with me and my tuna. I will eat this tuna salad in a lettuce wrap, or just strait up out of the bowl! It's yumm-didly!

Tuna Salad (fully loaded)

Ingredients:

  • 1 can of tuna, drained
  • 2 stalks of celery
  • 1/2 Cucumber, diced
  • 1/2 Red (or yellow, or orange) pepper, diced
  • 1 small onion, diced
  • 1/2 Avocado, diced
  • 1 Tbsp olive oil
  • 2 Tbsp apple cider vinegar


Method:

  1. As you're chopping up your ingredients (and opening your tuna can), just toss them into a small-medium sized bowl. Finish with the oil & vinegar, and mix it all up.
  2. Season with salt & pepper, and serve in large Boston or red/green leaf lettuce, or eat from a bowl. You could also (obviously) make this into a sandwich. To make my wrap I ended up adding a bit of pre-cut colourful coleslaw mix (just as it is out of the bag), and some hot banana pepper rings. 
  3. That's it!

   Well, I thought yesterday was Friday for most of the day because of it being the last day of school, and my brain wants the last day of anything to be on a Friday. Today is indeed Friday though, and I hope everyone has a good one!
