Spicy Chicken Skewers

   Hey there world wide webbers. Webbers is not a real word, fyi.
   I know it's getting cold, I know summer is technically almost over, so perhaps that's why I went looking for a spicy bbq recipe to share to keep the summer alive!!!
   This one hit the spot, and turned up the heat. Wow, that was cheesy. I don't care, I'm leaving it.

Spicy Chicken Skewers with Sesame Dipping Sauce

Ingredients:

  • 2 Chicken breasts, butterflied and sliced into 4 strips each side (should have around 16 total) 
  • Salt & pepper (just sprinkle it on your chicken right before marinading it)
  • 16 Skewers (or as many as you have strips of chicken)-soaking in water...I forgot to soak mine for this batch and you can tell by the charred skewers. Whomp whomp. 


For the spicy marinade:
  • 1 red or green chilli, seeds removed and finely chopped (thoroughly wash your hands, cutting board and knife after prepping this! If you don't do a thorough job, then itch your eye....it will burn!!!). You can also use a jalepeno pepper if you don't want it as spicy.
  • 2 Cloves of garlic, finely chopped or put through a garlic press
  • 1 Tbsp each: Maple syrup
                         Vinegar
                          Lemon juice
                          Olive oil

For the dipping sauce:
  • 4 Tbsp Sesame oil
  • 3 Tbsp Coconut Oil (warmed/melted)
  • Pinch of cayenne
  • Salt & pepper to taste


Method:
  1. Whisk all the marinade ingredients together and set aside
  2. Place the chicken slices into a zippered plastic bag, then pour the marinade over it (reserve a few plan chicken pieces if kids are eating this too)  :)  
  3. Allow this to sit for a few hours
  4. Once you are ready to get cooking, heat the bbq to medium.
  5. Carefully (without putting a skewer through your hand!!!), "thread" each piece of chicken onto a skewer. Discard the leftover marinade.
  6. Once all the chicken pieces have been skewered, quickly grease the bbq grill to prevent sticking (either by using a pastry brush with olive oil, or the not as safe option, a paper towel with olive oil on it. Use your bbq tongs to pinch the greased paper towel, and rub it onto the grill 
  7. Place the skewers onto the hot bbq, and cook for 10-15 minutes. Basically 5-7 minutes each side depending on how thick your meat was. It can take as little as just 10 minutes.
  8. While the meat is cooking, whip up your simple dipping sauce by adding the warmed/melted coconut oil to a small bowl, the sesame oil, add the cayenne and the salt & pepper. Pour into a few smaller bowls if you have any (you may need to make more, depending on who loves sauce in your house).
  9. Once the skewers are done, remove them from the bbq, and either serve them with a little bowl of the dipping sauce, or by pouring the sauce over them.

   It's a pretty easy process, with fantastic results. I didn't get any pictures of the dip, but it is gooood. I prefer to dip each skewer into the sauce, where my husband likes to dump all his sauce right onto the chicken.
