Roasted Brussel Sprouts with Bacon

   I think most people had brussel sprouts that were over cooked growing up. I personally don't even remember eating them until I was older, and then I had to eat them overly cooked. Yuck! Anywho, all that to say they weren't always my favourite, but I have a thing about trying new veggies (or old veggies that I didn't quite like), and giving them a second chance. After all, it's not that I didn't like the veg, it was the way it was prepared. 
   Well, this recipe will change the way you see squishy old brussel sprouts, trust me!

Roasted Brussel Sprouts 
with Bacon (side dish for 2-3 people)

  • 3 Cups brussel sprouts
  • 2-3 tablespoons melted butter (or coconut oil)
  • 1/2 Onion, sliced (thick)
  • Salt and pepper
  • 2 bacon slices, diced
  • 1/2 tbsp ginger, or asian spice (optional)

Method: 

  1. Preheat your oven to 400°F 
  2. Prep a baking sheet by lining it with tin foil, set it aside.
  3. Trim the ends and any sad looking outer leaves from the Brussels sprouts.
  4. Cut the sprouts in half, and toss them in a bowl with the melted butter, sliced onions, salt and pepper, and ginger/asian spice (if using).
  5. Dump the whole mess out onto the prepped baking sheet, speeding it out to one layer. Sprinkle bacon on top, and put into the ready oven.
  6. It will take 30-35 minutes total to roast these lovelies, but every 10 minutes or so you should turn and flip them so they roast evenly.

   This is such a yummy, yummy dish, I ate it for lunch (all of it to myself!-insert evil laugh here!!). I hope you give it a real, grown-up try!

I have always loved brussel sprouts!!! but my mom won't anything green unless she cooks them like this.. because she loves bacon haha!! love the watering eyeball!

I've honestly been looking for a way to cook brussel sprouts that I might like, so I will give this a try! I will obviously be a total loser and make the vegan version, so no bacon - but maybe roasted nuts thrown in for the last 10 minutes would do the trick!

The roasted nuts would be a nice addition (for those losers who don't eat meat) :) I may try it next time with nuts, AND bacon!

So, you can just use raw bacon for this? I worry about it not being cooked long enough.

Yup, you use raw bacon. Full pieces of bacon only take 20 minutes to cook in the oven, and these pieces are cut up, and cooked longer, so they are well cooked. Fear not.
