Paleo Sesame Chicken

      Mmmmm, I want to eat this again right now! But, it's pre-sunrise and "whipping up a batch" of sesame chicken seems like a little too much....? Yes? No?

     Anyway, when I made this for the first time, my husband said he would gladly eat it every week. That's saying a lot for him because he quite dislikes eating the same thing week after week. That's legit. Who wants to be bored with dinner? What a waste of a meal if you're bored with it!?! I love to love my meals! I love to enjoy my meals! And this dish is one I really love to enjoy!

    It is really simple to pull together, and tastes so great. I can't say "it's better than take-out" because, truthfully.....I don't think I've ever had take-out sesame chicken....? But I can say it has such fantastic flavour; it's sticky, sweet, garlicky & gingery! Wonderful, wonderful!

Paleo Sesame Chicken
From Wicked Spatula

Ingredients
  1. 1 egg
  2. 2 Tbsp arrowroot powder
  3. Salt & pepper
  4. 1  1/2 lbs chicken breast or thighs
  5. 3 Tbsp coconut oil, for frying
  6. 1-2 Cups (Optional) Veggies (pick one of them or all of them, as I I did!)
  • Broccoli
  • Onion
  • Bell Peppers
(you could also choose green beans or water chestnuts)
​***If you use frozen veggies, run them under some warm water to thaw out slightly***

For the Sauce
  1. 1/4 cup + 1 tablespoon coconut aminos
  2. 2 Tbsp coconut sugar
  3. 3 Tbsp  applecider vinegar
  4. 2 Tbsp water
  5. 1  1/2 Tbsp arrowroot powder
  6. 1 Tbsp honey
  7. 2 Tbsp sesame oil
  8. 2-3 inch Piece of fresh ginger, grated (depending on hoe gingery you want it!)
  9. 2-4 Cloves garlic, minced (depending on how much you love garlic!)
  10. 1/4 Cup sesame seeds
  11. 1/2 Tsp crushed red pepper flakes (optional)
  12. 1/4 teaspoon salt


Method:
  1. Cut the chicken into small bite size pieces.
  2. In a large bowl whisk the egg, 2 tablespoons arrowroot, salt & pepper until smooth and no lumps remain. Throw the cut up chicken into this mixture, and stir to coat
  3. Whisk all of the sauce ingredients together in a small bowl until no clumps of arrowroot remain and set aside
  4. Heat about 3 tablespoons of coconut oil in a large skillet over medium-high heat
  5. Working in batches fry the chicken until golden and crisp and almost cooked through (can take 2-4 minutes per side, depending on how big your pieces are)
  6. Once all the chicken is cooked, add all of it, as well as the egg mixture you had it coated in, back into the pan
  7. Now add in your veggies and stir everything together to cook until veggies are soft (as soft as you prefer). I like mine to be just barely soft (and the broccoli to be a nice, bright green), which can take about 3 minutes
  8. Pour in the sauce and toss. It should instantly become thick and glossy
  9. Remove from heat & serve!

  I like to serve Chinese dishes with stir fried cabbage (I just dump the pre-cut coleslaw mix  into a pan with some oil, salt & pepper and fry it quickly). I also love using "miracle noodles" (I buy mine from Vitacost)

    This week was like, "whaaaaaa?" for me.

   Family Day was on Monday, so it was a holiday. Then Tuesday the buses were cancelled because of the wintery weather. Wednesday my kids school was closed due to burst water pipes. The kids finally went back to school on Thursday, but, I mean, that's confusing! My eldest child (who has autism) couldn't figure out what his day would look like ("free time for french?", "popcorn day?") because he was so thrown on what day of the week it was, and my youngest came out of her room and asked if we were going to church thinking that maybe it was Sunday! I felt the same!

   Wednesday I had a dance rehearsal for The Music Man and I got home late, so that was exhausting. Then last night my husband and I were at week 7 of a 10 week course we're taking, and we get home late from that, so I was even more exhausted!

   I want my coffee to be administered intravenously this morning.......

  When I finally sat my sorry self up in bed this morning, I mumbled to my husband, "guess what we're doing first thing tomorrow?", and he answered, "not getting up early?". He guessed right!!!

    Ok, whining over! : )
