Mini Turkey Meatloaf Cupcakes

   Well, these mini turkey meatloaf muffins are fun and yummy. You can just make them without the potato top (so that it's just a meatball minus the rolling into balls part!), but that's up to you! Making the potato topping can happen while the minis are cooking, so it doesn't really take any extra time, just a bit more effort. It's worth it though because these are cute, which obviously matters. ;)

Mini Turkey Meatloaf Cupcakes
Makes about 18 minis

Ingredients:
  • 1 16 oz pack ground turkey (1lb)
  • 1 onion, minced
  • 1 sprig of fresh rosemary, pulled from stem and chopped finely, or 3 tsp dried
  • 1 Tbsp olive oil
  • 2 Tbsp coconut flour (you can use regular flour if you're not gluten free/paleo)
  • Salt & pepper to taste
  • 1 Large sweet potato, or 2 medium/large white potatoes, cut into 1 inch cubes (this is only if you want to make the potato "icing")


Method:

  1. Preheat oven to 350 Degrees. Lightly grease a mini muffin tray, and set aside.
  2. Set a large pot of water on the stove on high heat and bring to a boil (this is for the potato "icing", so if you don't want the potato top, skip this step). 
  3. While the water is warming, start your mini meatloaves by placing all ingredients (except potato) into a bowl, and use your hands to mix/blend together. 
  4. Once well mixed, use a 2 tbsp scoop, or scoop in 2 tablespoons worth of the meat mixture, into the prepared mini muffin cups and press down slightly.
  5. Bake for approx. 17 minutes, until one of the meatloaves cut open shows no more pink.
  6. While the meat is baking, place potato (whichever kind you choose) into the pot of water that should now be boiling. 
  7. Sprinkle some salt into the pot, and continue boiling until the potato is tender, about 10-12 minutes. Once finished, drain water. Add salt and pepper, and if you want a dollop of butter or coconut oil add that too. 
  8. Mash the potato using a fork or potato masher. If you plan to pipe this onto your minis, then use an electric hand mixer to really cream and whip the potato. If you are just going to spoon it on you don't need to worry about the lumps as much.
  9. Once your mini meatloaves have finished cooking, remove them from the muffin tray, and place onto plates or a serving platter. 
  10. Pipe or spoon the potato "icing" into your minis, and serve.

   I packed the leftovers from these for a long drive we had the next day, and they were just soooo good cold! Bonus! :)
