Mini Easter Egg Treats

   I am posting more desserts today because I want to share my Easter treats with you before Easter gets here! 

   I loves me some Cabury's Easter chocolate, and think it makes the most simple, but lovely Easter desserts. These 2 treats are simple to make, and a pleasure to eat! 

   So, I'm sharing 2 recipes, both gluten-free, and both simple, no bake and yummers!

Rice Krispie Mini-Egg Squares


  • This recipe (the only difference I make is that I use a 1/4 cup of butter (it only calls for 3 tablespoons.)
  • 4 small bags (39g each) of mini eggs (or roughly 3/4 of a 200g bag)

Method:

  1. Prep a 9x13 pan with wax or parchment paper, leaving overhang as handles to remove the squares after.
  2. Put the mini-eggs into the pan, and spread around evenly.
  3. Prepare squares according to instruction in the link above. 
  4. When placing the prepared mixture into the baking dish, only dump about half of it in first, and using your hands press the mixture down so that it sufficiently grabs and holds the eggs. Then dump and press the rest of the mixture in. 
  5. Let it set, then carefully lift the squares out of the pan, and flip over, so the eggs are on the top.
  6. Cut and devour!.....or save for some children you might know who would like them....but I would recommend the first option :)

​Mini Egg Macaroon Nests


  • Use my macaroon recipe 
  • 200 g bag of mini eggs (approx.)


Method:

  1. Prepare 2 mini muffins tins with mini papers, or lay out parchment or wax paper on a counter or table
  2. Prepare macaroons as described in link above.
  3. Using a 1 tablespoon scoop, scoop out the mixture into the mini muffin cups, or onto the parchment or wax paper that's laid out. Press one egg into each nest, and let them sit out until set. 


 * If you would rather have fewer, but bigger nests, just use a 2 tablespoon scoop (either in large muffin cups, or on a counter or table), and put 2 or 3 eggs in each. Do whatever floats your boat!

    O.k, so even though I did want to eat all of these treats, I did put some into bags to give to other families. My simple wrapping was to put the nests into plastic zip-top style bags, and wrap the squares in plastic wrap, then put them into a plain ol' paper bag with an Easter sticker on them.
