Honey Mustard & Rosemary Chicken

   All I can say about this chicken is yummmm!!! For realz, even my pickiest little Abby liked it. Well, first she ate it and said, "this is yucky", and I said, "that hurts my feelings, try again". So she said, "Ummm....this is different?", and I said, "thats fair. Now, try a few more bites before you decide how you really feel about the taste". So she tried a few more bites, then said, "this is different....but very yum". So, there you have it. A fairly-picky 5 year old critics opinion on this dish, and she has eaten it without any complaints since. So, you should try it. :)

Honey Mustard & Rosemary Chicken

Ingredients:

  • 1/4 cup of grainy, course mustard
  • 1/4 cup smooth dijion mustard
  • 1/2 cup honey 
  • 2 teaspoons extra virgin olive oil
  • 1/2 of a small yellow onion, diced
  • 4-5 Chicken leg quarters (thighs and drumsticks), separated. You can also just use drumsticks, or thighs. If you're a family that buys chicken breast, they will be great too. 
  • Salt and pepper to taste
  • 3 - 4 small sprigs of fresh rosemary (or 3-4 Teaspoons dried) 


Method:

  1. Preheat the oven or your BBQ to 400 Degrees. 
  2. In a small bowl, combine the mustards, honey, and olive oil.
  3. Line a baking dish with tin foil, and then some parchment paper. This step is just a dish-washing preference of mine. Baked honey can be sticky, and I don't want to scrub it out of my pan! If you trust your pan more, or don't mind scrubbing, just lightly grease a pan with butter or coconut oil. 
  4. Place the chopped onion into the pan, then put chicken into the pan on top of the onion. Sprinkle the chicken with salt and pepper.
  5. Pour the honey mustard mixture on top of the chicken, then place the rosemary sprigs around the chicken in the pan.
  6. Bake the chicken covered loosely with tin foil for 20 minutes. Then remove the cover, baste the chicken with the sauce, and continue to cook for an additional 20-30 minutes uncovered until the chicken is cooked through and brown skinned.

   This chicken is simple enough for a weekday family meal, but seriously tasty enough for guests. So, give it a try, and let me know what you think! Or, let me know one of your favourite and easy ways to prepare chicken!

my mother in law and I are going to make this tomorrow… but with chicken breasts hahah and i need to go buy grainy dijon...

Made this for dinner tonight as I had all the ingredients and chicken drumsticks were on sale (definite bonus) Delicious....our newly picky eater even ate a whole drumstick (as long as he was allowed to eat it like a horse, so no hands just munching directly off his plate) It turned out nice and juicy!

I'm sure eating this as a horse would add a new element to the whole experience! Perhaps I'll try it next time I have this! ;) I'm glad it turned out and you enjoyed it!

I used to do just mustard and garlic.
This will add a nice twist to it.
