Flour-Free Brownie Cookies

   I started working on a new project with the Belleville Theatre Guild, choreographing for their spring musical "Into The Woods". As is my tradition, I bring baked goods to rehearsals because I love to bake, and love having people to bake for! 
   I found out at my first rehearsal that a cast member has a peanut allergy (and I love making things with peanut butter), and there are also some people avoiding gluten, so, I took up the challenge and whipped up these crazy delicious, super chocolatey cookies!

Flour-Free Brownie Cookies
Makes 35 cookies

Ingredients:

  • 1/2 cup butter, room temperature 
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/2 Tsp corn starch
  • 1/2 teaspoon salt
  • 1 cup cocoa powder (use the best you can find, it will give you a more rich chocolate experience! If you prefer less chocolatey, use any cocoa)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup walnuts (optional)


Method:

  1. Preheat oven to 350 degrees F.  Line a cookie sheet with parchment, & set aside. 
  2. Cream together the butter and sugars. Add the egg and vanilla and mix until combined. 
  3. In a small bowl mix together the baking soda, cornstarch, salt, and cocoa and add to the wet ingredients, mixing until combined (it can take a few minutes to work it all together). 
  4. Stir in the chocolate chips (and nuts if you're using 'em).
  5. Using a one-tablespoon scoop (like the small Pampered Chef scoop), or a regular tablespoon, scoop cookies out into baking sheet, 3 inches apart.
  6. Bake in pre-heated oven for 7 minutes. They will look a touch under done, but that's perfect, they will continue to cook a little as they cool.

Hot out of the oven (and my little Keziah counting the chocolate chips I gave her) :)
   The chocolate smell of these was so wonderful!  After I had put them into a container, I kept opening the container to take a deep breath and smell the chocolate goodness!

Just made these cookies today....they are very tasty and very chocolaty! I had to keep them in the oven for 9 minutes instead of 7 (ovens can be finicky), but other than that this was a nice and quick cookie recipe. I will definitely make these again. Thank you for sharing!

These are very chocolatey indeed! I'm glad you made them and they turned out well. It's true about ovens, my oven door recently FELL OFF while I was baking something! Talk about finicky! haha!
