Dulce De Leche & Marshmallow Brownies

   A good friend recently told me she thinks I have an addiction to marshmallows. I will quite opening admit to that being true! This recipe was just going to be some sort of Dulce Du Leche brownie, but marshmallows seemed essential here. Essential! :)

Dulce De Leche & Marshmallow Brownies 
*This is the exact same recipe I use for my gluten-free brownies, but I made them not gluten free this time. It works beautifully either way.

Ingredients: 

  • 1 Cup butter, softened
  • 1 Cup brown sugar
  • 1 Cup white sugar
  • 4 eggs
  • 6 Tablespoons cocoa
  • 1 Cup all purpose flour (a gluten free flour blend works as well)
  • 2 Teaspoons vanilla
  • 1/2 Teaspoon salt
  • 1/2 Cup Dulce Du Leche sauce (homemade or store bought), warmed slightly (so it's pourable)
  • 1-1 1/2 cups mini marshmallows (depending on how mallowy you want them!)

Method: 
  1. Preheat oven to 350 degrees F. Line a 9X13 pan with parchment, and lightly grease. Leave enough overhang of the parchment to be able to pull the squares out of the pan.
  2. Cream the softened butter with the sugars. 
  3. Mix in the eggs, and then the cocoa, flour, vanilla and salt.
  4. Bake for 20 minutes, the brownies will not quite be done yet. 
  5. Take warmed Dulce du Leche, and pour evenly over the brownies. Then sprinkle marshmallows evenly over top of the brownies and dulce du leche, and place pan back into the oven for 10 more minutes, or until mallows are puffed and golden (if they aren't getting golden enough at the 10 minute mark, turn the oven to broil for 3-4 minutes. If you leave it too long baking you'll over-bake the brownies). 
  6. Take the brownies out and cool on a wire rack until the mallows have cooled. Cut around edges of squares and gently pull on the parchment handles to get the squares out. Place onto a cutting board, and cut as desired. I boil a kettle to have very hot water to dip my knife to make cutting through the mallows a little less sticky.

If I am bringing something like this to a party, or serving it as dessert for guests, I like to plate each piece in a pretty muffin cup. It keeps them from sticking to each other, and keeps peoples fingers clean.
   
   For real, does anyone not like marshmallows? I'm not saying can't eat marshmallows, but who really doesn't like them? I have yet to meet anyone with this malfunction! :)
