I've got another recipe today featuring zucchini from my neighbours garden! :) Chocolate zucchini muffins are nothing new, so if you're thinking, "eeewwwwww", you suck, and you've never tried it. You're just guessing it's gross because we treat zucchini as a vegetable, but in reality (botanically) it's fruit. I know. Bonkers. Well, this week is wrapping up! I feel like it flew by! I went for a walk yesterday morning, and was freeeeezzzzing!!!! Just last Thursday I went for a horseback ride feeling nice and warm and only have a t-shirt on! Geepers Canada! I'm never sure what to expect! Last night I went to the first night of volleyball for the season, and it was a blast. It's a non-competitive (super duper non-competitive!) group of ladies, and just a really good night! Anyway....another mug cake....I am so sorry to those who don't own a microwave!!! I never wanted us to have one, but my husband came home from work one day with one he had bought from a co-worker, and, I will admit, I was pissed! Haha, for realz. Anyway, now he likes to rub it in my face a little that I have a fairly serious microwave mug-cake problem!!! This cake today is a gem....mmmm, man it's so good! It was meant to be a chocolate chip mug cake when I first started mucking around, but the chocolate would melt because my coconut oil was too hot, and I realized-who cares?!? O.k, I'm officially freezing here! It's only September, and I refuse to turn the heat on in our house-which for us means getting the outdoor wood boiler up and running, and us having to fill it with logs a few times a day-that is too much effort for heat in SEPTEMBER!!! Whomp whomp.
It just means I'm writing with gloves on, which means every word I type I need to re-type 5 times because typing with gloves on is not really possible! I love the fall though, it is crisp, the air feels clean and free of that muggy summer hot, fresh apples (and apple cider!), cozy sweaters, hot chocolate, the Rockton Fair!!! Oh boy, I'm feeling good (though frozen...) about the fall! Have a good weekend everyone! Me and my mug cakes. I just love that I can whip up a nice warm treat with just enough for my one portion. Love it. I made a paleo chocolate mug cake a while back, and it's good and tasty too, but I wanted to experiment with texture and get a more fudgey-cakey feel, and less of a spongey-cakey feel. Well, I have family visiting this week, so I may be fairly absent (again). And this week is also leading up to the epic event of the summer-the Toy Story 2, Buzz Lightyear new utility belt birthday party! O.k, I don't think it's that exciting, but my fantastic son with autism has been talking and talking about this party since...oh, I dunno, I'm gonna say December? Maybe earlier? I can't be sure now it's been so darned long! Anyway, I hope you all had a great weekend, and have a great week too! Still here! :) The only thing I have to say about these bars is....yu-uumm! They are really tasty, and you can customize them with what things you might have on hand. I tend to make them as a last minute type thing because they are easy to pull together. They do need sufficient cooling time though, so if you're going to make them last minute, be prepared to bring them to wherever you're going with them still in the baking dish. My kids love freezies and popsicles. I think most kids do. We rarely buy popsicles though because we live too far away from where we get our groceries, and they would melt before we ever got them home! So, for 99 cents I got a popsicles mould, and we've been having a great time making our own popsicles. I'll be posting a few this summer so a look out! O.k. folks, I'm signing off for another week! The hubby starts his holiday next week, and I'm not 100% sure yet where we're going (or if we can go where we were planning!), but all I do know is that for the next 2 weeks my posts may be a bit sporadic! We went into Tweed for their parade, then to the park where they were serving birthday cake, and had a hose from a fire engine spraying water on the kids! It was as fun as it sounds, and as dangerous as it sounds! I'm surprised some kids faces didn't get ripped clear off! But they were all having fun, so that's good! I'm just sitting here sweating.......bleh. Anywho, let's talk about Canada. No lies, I love living in this country for a lot of reasons, but lets keep these brief(ish)-lets just talk about our food! I wanted to make a Canada Day treat to honour our countries birthday, and the usual things come to mind: red and white like our flag (strawberry shortcake, anyone?), but I'm not much for being predictable, so I thought, "tastes of Canada?" Out west? Beef. Out east? Seafood. Quebec? Poutine...none of these things screamed "make me into a dessert!" The idea just made me a little ill actually...and made my husband laugh at me. I dunno...anyway, I thought about one of my favourite foods...maple syrup! Oh man, this country can produce maple syrup like its nobodies business! O.k, so, moving on from maple syrup, us Canadians love bacon (we're only 7th in the world as far as producers of it, but that's not too bad!). And maple bacon is a favourite among many (my husband excluded!). A lot of people appreciate a plate with pancakes, bacon, and the syrup being "allowed" to touch both! So, we've got maple syrup, bacon, and what else could we add...not 'exactly' Canadian, but we eat it a lot in this Canadian house: chocolate! :) Phew, that took a lot of thinking on this hot, hot day! So, speaking of hot, let's not use the oven at all for this dessert!!! I'm melting!!!!!! O.k., we've got to cook some bacon, but that's not too bad! So, these squares have a hint of salty, smokey bacon, a hint of maple syrup, and a lovely chocolate top keeping it all real.
If you're heading to a Canada Day party, make these to bring along! Some people will love them, and some people won't even try them! Haha, just being honest! Any maple & bacon lovers or haters out there? Share your feelings! I know I already posted an avocado recipe this week, but get over it. :) I also know avocados are high in calories, but food is more than calories (gasp, I know! How could I say such a thing!). Ignore the calories and look at the fact that one avocado has no cholesterol, tons of fibre, you've got some protein in there, 24 vitamins and minerals, as well as fats that are good for you, such as Omega 3, and polyunsaturated and monounsaturated fats. So, in summary (I haven't used that one in a while!), don't be afraid of the ugly avocado! In the future I will be sharing some more savoury recipes that you can use avocados for. Good monday morning to you! Today I bring to you a treat that has saved me many a time while eating clean! Being honest, as a woman, there is a certain time every month where if I don't eat some chocolatey sweetness at least once in the day I could just have an adult melt-down! Just joking...well, half-joking. Anyway, years ago a friend gave me a recipe for chocolate banana avocado pudding, but at some point I lost the recipe and was just winging it. There was always something that wasn't my favourite about it though. After it had been in the fridge for a day, it started to taste a smidge like super-ripe banana, which is not what I want to taste while eating chocolate pudding! So, I've been winging and tweaking, and have a pudding that not only tastes great right when you make it, but tastes even better after it's been in the fridge! 5 Ingredient Avocado Chocolate Pudding (no bananas!)
