Bacon Wrapped BBQ Chicken

   So, a bacon wrapped chicken recipe for ya today. It's really pretty simple, and turns out great. My mind is feeling empty right now, so I don't have much else to say.........o.k, well, enjoy!  :)

Bacon Wrapped BBQ Chicken
The chicken will need to marinate at least 30 minutes in the bbq sauce before cooking.

Ingredients:
  • 3 large chicken breasts, cut lengthwise into 2 inch thick strips
  • Enough strips of bacon for the number of chicken strips you have (this can vary based on the size of the chicken breasts)

For the BBQ Sauce:
  • 3 Tbsp honey
  • 1 Tbsp Paprika
  • 1/4 Cup Mustard
  • 1 Tbsp Franks Hot Sauce (more if you like some kick)
  • 1 Tbsp Tomato Paste

Method:

  1. Combine the ingredients for the sauce in a medium sized bowl. Place chicken strips into the sauce, cover with plastic wrap and allow to marinate for at least 30 minutes, or several hours.
  2. When ready to cook the chicken, turn the BBQ onto medium heat (for my BBQ that's about 400-450 degrees). 
  3. Take the bacon and lay a few pieces out at a time, a few inches apart, onto a cutting board. Take one piece of chicken out of the sauce, and place it at a long end of one piece of bacon so you make an "L".
  4. Roll the chicken up into the piece of bacon so that it is completely (or almost completely) covered. Take some of the sauce (with your already messy hands), and rub it gently onto the bacon. Then, use a small tooth pick to hold each end of the bacon down. 
  5. Lay the bacon wrapped chicken down on a plate, and continue with the rest of the chicken and bacon until it is all gone. Discard the remaining BBQ sauce.
  6. Now that the grill is hot, spray the top rack with cooking spray (use coconut or olive oil spray to keep it paleo)-and do this carefully as this can often cause a mighty flare-up! If you don't have cooking spray, use a paper towl with some olive or coconut oil on it, and use tongs to wipe the grill with the oiled paper towel.
  7. Place the chicken onto the oiled rack, and leave on that side for about 5-7 minutes, then flip it over and leave for another 5-7 minutes. 
  8. For the last 5-10 minutes on the grill, you'll want to put the chicken onto the lower (closer to the heat) grill to get the bacon crispy. These should take about 20 minutes total to cook through on the BBQ.

   I ran out of little toothpicks....this will still work without them, but the bacon can twist off as it cooks. So, without tooth picks it just means you have to keep your eye on these more, and make sure the ends of the bacon are facing down on the grill to keep them from flying away!
